Persimmon salsa
For our Mexican food-themed party on Halloween, I knew I wanted to make and bring something orange. As I looked around for inspiration at home, I spotted my persimmon tree. And creating a salsa using persimmons from my tree came to mind. Here’s the result! Even beyond Halloween, this would be a great addition to any holiday party.

Ingredients
- 2 to 4 tablespoons of onion, chopped small
- 1/2 jalapeno, chopped small
- 1/4 bunch cilantro, chopped
- 1 lemon, juiced
- 1 tomato, chopped small
- 4 to 5 medium Fuyu persimmons, chopped small
- 1 to 2 teaspoons salt
Directions
Mix all of the ingredients together in a bowl and enjoy with corn tortilla chips.
